Entertaining at Home: Easter Recipe for Sweet and Salty Popcorn Balls

I had so much fun making these sweet and salty popcorn balls for Easter. To be honest, I didn’t mean to make them as big as I did (they easily require two hands to eat), but it turned out to be kind of symbolic. These giant balls remind me of the giant stone that blocked Jesus’s tomb before He rose from the dead. The pops of color found in the sprinkles and peanut gems feel almost like ribbons or wrapping paper, representing the greatest gift the world has ever seen: God sacrificing His Son, paying the price for our sins by dying on the cross so that we can live freely here on earth and have eternal life in Heaven. What a gift! These sweet treats remind me of the sweetness and goodness of God, and I hope they do the same for you and your family, too!


Sweet & Salty Popcorn Balls

These sweet and salty popcorn balls are the perfect treat for Easter.

Directions:

  • Start by melting butter in a sauce pan. Once melted, add the marshmallows.

  • Once the marshmallows cook down a bit, add the powdered sweetener, salt, vanilla extract, and butter extract (this enhances the butter flavor, but if you don’t have it or can’t find it, don’t fret, you can skip it).

  • Once the mixture is combined, mix in popcorn. Let the marshmallows cool a bit before mixing in the chocolate covered peanuts.

  • Melt the white chocolate with coconut oil, then drizzle on top and finish it off with some rainbow sprinkles.

Ingredients:

  • One 10 oz. bag marshmallows

  • 1/4 cup butter

  • 1/4 cup powdered sweetener

  • 1 tsp. salt

  • 2 tsp. vanilla extract

  • 1/2 tsp. butter extract

  • 2 single-serve bags microwave popcorn

  • 5 oz. chocolate covered peanuts

  • 1/4 cup white chocolate, melted

  • 1 tbsp. coconut oil, melted

  • Rainbow sprinkles, to taste
